CREMA CATALANA

This is a Spanish Sweet Desert

Ingredients:
  • sugar : 100gm
  • egg yolk : 2 No.
  • corn flour : 1/2 tbsp
  • cinnamon : 1 stick
  • grated rind of lemon : 1/2 No.
  • milk : 250ml

Method:

  1. Beat together egg yolks and 3/4 of the sugar in a port until blended and frothy.
  2. Add the lemon, cinnamon and pour on the milk.
  3. Slowly heat the mixture and stirring constantly, until the mixture thick and the resistance is felt.
  4. Remove from the heat, remove the cinnamon stick and divide the cream between two dishes that are heat safe. cool and place in the refrigerator.
  5. Before serving this desert, scatter the remaining sugar on the surface and grill under the salamander until the sugar starts to caramelise, serve immediately.
