Ingredients:
- sugar : 100gm
- egg yolk : 2 No.
- corn flour : 1/2 tbsp
- cinnamon : 1 stick
- grated rind of lemon : 1/2 No.
- milk : 250ml
Method:
- Beat together egg yolks and 3/4 of the sugar in a port until blended and frothy.
- Add the lemon, cinnamon and pour on the milk.
- Slowly heat the mixture and stirring constantly, until the mixture thick and the resistance is felt.
- Remove from the heat, remove the cinnamon stick and divide the cream between two dishes that are heat safe. cool and place in the refrigerator.
- Before serving this desert, scatter the remaining sugar on the surface and grill under the salamander until the sugar starts to caramelise, serve immediately.
